Velvet Lovers Trio



  • 2 cups local apples, diced
  • 1 tablespoon lemon juice
  • Zest of ½ lemon
  • ¾ cup + 2 tablespoons sugar
  • 2 teaspoons all-purpose flour
  • ½ teaspoon cinnamon
  • ¼ cup cold unsalted butter, sliced
  • 1 large egg
  • Prepared pie dough


  1. Preheat oven to 425 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In a bowl, combine apples, lemon juice, lemon zest, sugar, flour and cinnamon. Roll out prepared pie dough ¼ inch thick. Using a 3-inch round cookie cutter, prepare 16 – 20 circles.
  4. Place half of the dough circles on the parchment paper. Top each with 1 to 2 tablespoons of filling. Place a pat of butter on top of the filling. Place second half of the dough circles on top and using a fork, pinch sides together forming a nice bond. Slice air vents in top crusts.
  5. In small bowl, crack one egg and add in a tablespoon of water. Whisk together to create an egg wash. Brush pies with egg wash and sprinkle tops with remaining 2 tablespoons of sugar. Bake for 15 minutes or until golden brown.
  6. Serve with a large scoop of Velvet Vanilla Lovers Trio ice cream
